Decide Which Juice You Will Use

In order to get the best hard cider possible, you should use fresh sweet apple cider that was just pressed in a cider press. If you decide to buy regular sweet apple cider instead, make sure the cider was not made with chemical preservatives (sodium benzoate or even potassium sorbate). Check the label on the bottle to make sure it does not contain chemical preservatives, since they will kill yeast, and as a result, the cider will not ferment. An easy way to get cider that does not contain preservatives is to buy some from a local orchard or even an organic store. Another consideration about the cider is use cider that was pasteurized with cold pasteurization through the use of ultraviolet light instead of doing it with heat. If you use cold pasteurized cider, you will have the best results and a much better tasting hard cider.

Decide Which Yeast You Will Use

You can use liquid brewing yeast or even dry wine yeast. Usually, liquid yeasts are more expensive, but dry wine yeast will provide great results as well.

Your Hard Cider Starter Process

A day prior to brewing your cider, there is the option to make a starter, which will make sure your yeast is alive and able to ferment the cider. This is done by putting a few ounces in a bottle of apple cider, seal the bottle and shake it for about 10 seconds. In up to 6 hours you should be able to see the yeast fermenting by the bubbles, it should produce. If this occurs, open the bottle and put the whole yeast packet in the bottle, reseal and put it in the refrigerator.

Your Hard Cider Brewing Process

A few hours before brewing, take the cider out of the refrigerator. The brewing process is designed to kill bacteria and wild kinds of yeast. Be careful to not allow the cider to actually boil, but keep it to a simmer. Throughout the simmering process, you might like to add 2 pounds of honey or brown sugar instead, which will increase the flavor and final alcohol content. Simmer and stir the cider until the sugar has completely dissolved.

The next step is to pour the cider into a sanitized plastic bucket. This is done by washing it with a capful of bleach in water and allowing it to rest for 30 minutes.

Afterward, simply rinse it with clean cold water. Once this is done you can pour the simmered cider into the bucket and add the starter or yeast if you decided to skip the starter process. After this, stir the liquid for a few minutes and cover it with a lid and keep the cider between 60 to 75 degrees.

Allow the Cider to Ferment

After 24 to 48 hours, you should notice that the bubbles are forming, but this should die down after no more than 15 days. After this process, allow another week to let the yeast settle.

Bottling Your Hard Cider

After about 2 weeks you should bottle the cider in clean jugs or bottles and also seal them. After 15 to thirty days of being bottles, you have learned how to make hard cider and should definitely drink it.
